My Go-to, Kid-Friendly Dinner Recipes

October 4, 2017 | Leave a Comment

I have always enjoyed cooking. I used to have the time and energy to try out new recipes, but in the last couple of years with the addition of 3 kids and a busy work schedule, I can barely muster up the energy and excitement to throw a frozen pizza in the oven… But as…

Um, you guys. If there is one new recipe you try this weekend, make it this one. This honey sesame chicken in the crockpot is SO good and SO easy. (source) Holy. cow. I decided to make it because I needed a quick, easy meal that could cook while we were out of the house.…

Individual chicken pot pie recipe

Individual chicken pot pie recipe on TheMombot.com

I get pre-cooked chickens quite frequently from Costco, because at only $5 I can’t resist. If I am careful, I can get three meals out of one chicken for my family of 3. Because I like to shred it to get more mileage from one chicken, I’ve come up with lots of leftover chicken recipes. You can see those here

One night after bringing home a chicken, I had a craving for pot pie so I came up with a recipe using what I had on hand. I thought I would share it with you, but just know that I sort of threw it together, so the measurements are approximations and it’s a loose interpretation. But don’t worry; what’s great about this recipe is that you can pretty much wing it and it will still turn out great. The great thing about the individual cups is that it cooks faster than your average whole pie, and it creates perfect serving sizes for kids and for leftovers the next day.

So here we go…

Budget meal: Chicken rice bowls

April 26, 2012 | Leave a Comment

I found this recipe on Pinterest recently gave it a try. Guess what? It was amazing.

Best of all? It’s only costs $1.33 per serving according to Beth from Budget Bytes. I was so excited to find her blog, which is full of recipes that are budget-friendly. She breaks each one down and tells you how much it costs per serving so you can see what a great deal you are getting.

I’ve made chicken rice bowls before, as I’m sure you have. It’s easy to throw all your leftovers together with some rice and make a meal of it. But something about this one tasted SO good (I think the secret is in all the spices used). I didn’t really think it tasted like Chipotle as she suggested, but I think it might if I attempt to make Chipotle’s lime cilantro rice and replace the cheddar cheese with mozzarella. Yum.

Blogiversary week: Leftover chicken recipe round-up

April 13, 2012 | Leave a Comment

I love sharing yummy, healthy, and budget-friendly recipes. When I find something I love, it’s hard not to spread the news; especially because I know how much it takes to throw together a meal as a tired working mom at the end of the day, and still keep it healthy and affordable.

I am a HUGE fan of buying the precooked whole chicken – especially at Costco where it only costs $5. It’s well worth the money considering how large their chickens are and the fact that I don’t have to clean and cook it myself (bleck to raw chicken…).

Chicken pasta skillet recipe

It’s been a while since I’ve posted a recipe… I guess I haven’t been experimenting much lately! But I occasionally get recipes in my email from Kraft and Pillsbury, and last week I received this one that I thought looked good enough (and healthy enough) to try. I actually had leftover chicken in the fridge and was craving pasta, so it was a match made in heaven.

The Mr. and I try and eat low calorie, low fat meals, which leaves out a lot of yummy pasta dishes (especially ones with chicken, which usually include a creamy, fattening sauce). This dish was made with a red pasta sauce and lots of added veggies.

So I tried it out last week and everybody (even my 2-year-old) loved it! It was super easy, perfect for leftover shredded chicken (and faster because the chicken was pre-cooked), and made for good leftovers too. See more leftover chicken recipes

5-minute meal: Greek chicken pita folds

October 26, 2011 | Leave a Comment

I haven’t shared a recipe in a while, and just came across this one and remembered how delicious it is. Do you ever get stuck making the same meals over and over and suddenly you realize you have tons of other recipes you forgot about? My 5 million cookbooks should serve as a reminder, but for some reason, they don’t.

Anyway, this is another recipe that I’m dubbing a “5-minute meal,” because it gets seasoned and put in the slow cooker, and preparation is really quick and easy. It’s the perfect meal on a night when you know you’ll be strapped for time. It’s also healthy, delicious, and budget-friendly.

Leftover chicken recipes

August 18, 2011 | Leave a Comment

Last week I shared some of my favorite whole chicken recipes. Since I make them quite often, I usually have leftover shredded chicken lying around, and I’ve learned some really good ways to turn this into a cheap meal using ingredients I usually have in the house.

Here are two of my favorite (easy) recipes that I basically made up (they’re still edible, I promise!):

Link Love: How to cook a whole chicken

August 12, 2011 | Leave a Comment

I am a huge fan of cooking (and eating, for that matter) whole chickens. It wasn’t until about 6 months ago when we bought our first deep freezer that I actually had space to stock up on whole chickens; and, come to think of it, I’m not even sure I had ever cooked a whole chicken before that…

I get it. It's a little weird. But the girls I've I get it. It's a little weird.
But the girls I've seen do it best, look adorable.

I think it looks best with an oversized tee or sweatshirt, tennies or slides, and a small crossbody bag.

You can't argue with comfort.

For the record, these are women's sleep shorts that I've had a couple of years from Old Navy. If you buy actual men's boxers, you might consider sewing up the pee pocket 😜

Don't spend a lot on this trend; these shorts are made from the thinnest of fabric and shouldn't cost much. Don't be fooled by a retailer that wants you to spend just because it's trendy.

But if you see some cute boxers and want to give it a go - then do! Bonus - if/when the trend ends, you'll have pajamas on the ready 👏

It's solid weekend wear, but I'm not going out to dinner in it...

Another project down in my son's room! I knew I w Another project down in my son's room!

I knew I wanted some sort of built-in feature in this bedroom, but it was hard to figure out what, because we turned it into an active space where he could run and play and needed a lot of room.

So I settled on a built-in bookcase with the slatted design feature, which I'm in love with!

The best part about it is that if he ever decides to upgrade his bed, the space will also accommodate a full or queen size bed going in the opposite direction. It adds so much interest to this room and hopefully will be here for a long time!

One of the things I love most about DIY projects is figuring out how to make something - it's like a giant puzzle. I saw photos of these slotted wall room dividers on Pinterest and just figured it out as I went. All in all, I had very few hiccups and it only took me a few hours to put together. I think I only cursed once?!? And so I call that an extreme DIY win...

Now that the sports wall, the climbing wall, and the built-in feature are complete, the last thing to do in here is some additional painting. I'm thinking of using a contrasting blue color for the closet doors and back side of the built-in, and perhaps trimming out the window with it as well. Then I need to switch out the light for a fan and this.room.is done 🙌

Details: I used two IKEA billy bookshelves, screwed together and secured to the wall. Then wrapped them in white oak plywood. I ripped down 2x4s into 1.5x1.5" square dowels (heavily sanded!) and used pocket holes on the back side of each to secure to the bookshelf and the 1x4 in the ceiling. It's very sturdy!
