What I’m about to share with you will change your life. Ok, that may be a bit dramatic. But my husband was putty in my hands after I made these for him, and that deserves a raving review in my book.
The idea for this recipe all began when I found and reviewed a pin for eggless cookie dough that was meant to be eaten raw. After testing it out, I thought it was amazing but it wasn’t working for me in its original form. See, I felt kind of disgusting sitting on the couch with a big bowl of cookie dough and a spoon… I wanted a way to make it a little more portion-control friendly, so I rolled it into balls and put it in the freezer (because the balls were really sticky). This was good, but by the time I finished eating the frozen dough ball, my fingers were covered with a sticky mess. How can I hide my gluttony from my 3-year-old when the evidence is all over my hands??
So I came up with the idea to cover the cookie dough balls in rolled oats. I love oatmeal chocolate chip cookies, so surely this would taste good also, right? Correct.
After I make my cookie dough (and eat a few bites from the spoon, naturally), I refrigerate it so that it hardens a bit, then spoon and shape it into small balls and roll it around in oats. Then I put the balls in an airtight container and snack on them for the next few days. It’s heaven and it’s mess-free.
Here’s how you make them:
Oatmeal Cookie Dough Balls
Adapted from a recipe on BakersFunFoods.blogspot.com
Ingredients:
- 3/4 cup light brown sugar
- 1/4 cup butter, softened
- 1/4 tsp vanilla extract
- 1/4 cup milk
- 1 cup flour
- Pinch of salt
- 1/2 cup chocolate chips
- 1 cup rolled oats (quick oats work too)
Directions:
- Combine brown sugar and butter in bowl. Stir together until smooth.
- Add milk and vanilla, stir.
- Mix in flour, salt, and chocolate chips.
- Refrigerate for 1/2-1 hour to harden dough.
- Pour oats onto large plate.
- Shape a spoonful of dough into a ball with hands and roll in oats. Continue until all the dough is used.
- Place in airtight container in fridge or freezer. Last 2-3 days in refrigerator.
Tips:
- Don’t leave these sitting out over time; as they warm up, they begin to soften and get sticky. They taste best when chilled.
- If you don’t like oats, try rolling them in crushed up walnuts.
