I haven’t shared a recipe in a while, and just came across this one and remembered how delicious it is. Do you ever get stuck making the same meals over and over and suddenly you realize you have tons of other recipes you forgot about? My 5 million cookbooks should serve as a reminder, but for some reason, they don’t.
Anyway, this is another recipe that I’m dubbing a “5-minute meal,” because it gets seasoned and put in the slow cooker, and preparation is really quick and easy. It’s the perfect meal on a night when you know you’ll be strapped for time. It’s also healthy, delicious, and budget-friendly.

I have been so out of it lately… the summer is winding down, but August was our busiest month yet with two trips out of state. Next weekend we are having my nephew’s birthday party in our backyard, so for the last three days, my husband and I spent a good chunk of time finishing up all the plans we had for the backyard this summer (stayed tuned for the reveal photos!).

Last week I shared some of my favorite whole chicken recipes. Since I make them quite often, I usually have leftover shredded chicken lying around, and I’ve learned some really good ways to turn this into a cheap meal using ingredients I usually have in the house.
Here are two of my favorite (easy) recipes that I basically made up (they’re still edible, I promise!):
I am a huge fan of cooking (and eating, for that matter) whole chickens. It wasn’t until about 6 months ago when we bought our first deep freezer that I actually had space to stock up on whole chickens; and, come to think of it, I’m not even sure I had ever cooked a whole chicken before that…
I am a HUGE fan of chicken soup, but it seems more appropriate to eat during the cold days of winter than in the heat of summer. This is unfortunate since soup is usually a fast, one-pot meal that doesn’t take too much preparation – perfect for busy summer days.
We have tacos almost every week because it’s cheap, easy, and yummy. There have been quite a few times when I’ve opened my cupboard on taco night only to realize I didn’t have any taco seasoning. For some reason, it never crossed my mind that I could make my own.
The recipe is super simple and (score) I have all the ingredients in my cupboard (I’ll bet you do too!). I haven’t tried it yet, but I can’t wait to give it a go.
