You guys, I am over the moon about the fact that fall is here. Like, weirdly excited.
I think it’s because now that we are in Colorado instead of California, I get to experience a true fall season. The temperature has already dipped, the nights are chilly and the leaves are starting to turn a golden yellow.
I go to bed dreaming of pumpkin patches and apple picking and often smell the faint hint of banana bread in my nostrils – see what I mean? Weird.
What I’m about to share with you will change your life. Ok, that may be a bit dramatic. But my husband was putty in my hands after I made these for him, and that deserves a raving review in my book.
The idea for this recipe all began when I found and reviewed a pin for eggless cookie dough that was meant to be eaten raw. After testing it out, I thought it was amazing but it wasn’t working for me in its original form. See, I felt kind of disgusting sitting on the couch with a big bowl of cookie dough and a spoon… I wanted a way to make it a little more portion-control friendly, so I rolled it into balls and put it in the freezer (because the balls were really sticky). This was good, but by the time I finished eating the frozen dough ball, my fingers were covered with a sticky mess. How can I hide my gluttony from my 3-year-old when the evidence is all over my hands??
I am not a baker. I don’t like baking. I usually burn whatever I’m making, and it never looks as pretty as the picture I’m emulating. Strange, because I can definitely cook.
Anyway, when I ran across this recipe for peanut butter brownies on Pinterest, I noticed that it allowed for boxed brownie mix (yippee!) and only 3 other ingredients (peanut butter, chocolate chips, and peanut butter chips). I knew I could probably handle this one.
