I’ve been mentioning lately that my family is on the road to clean eating. Thanks to the internet and some amazing bloggers like Andrea from Howe We Live, my eyes have been opened to the dangers of eating highly processed foods with artificial ingredients and the benefits of those that are all natural. After lots of reading and researching, I decided that I wanted my family to cut out all the crap and focus on REAL food, so we switched to a clean eating diet.
Ever since my first child began eating solids, I’ve been a stickler for eating organic (particularly sticking to the dirty dozen list), and this is just one more step to eating the way we should so that our bodies can digest and process the foods we take in in the way that it was meant to.
So most of the meals in our house now consist of all-natural ingredients. We consume lots of fresh fruits and vegetables and hardly anything processed. When it comes to breakfast, I’ve never been a big fan of feeding my kids cereal, since most are high in sugar and artificial ingredients, so I was pumped to find this really easy recipe for breakfast cookies on Pinterest. The ingredients are all-natural and it’s void of added sugar. Plus, what kid wouldn’t want a cookie for breakfast? You should see the way my kids faces lit up when I told them they were could have these for breakfast!
So if you are looking for a super simple recipe that you can throw together in about 30 minutes, will take care of breakfast for the next few days, and is actually healthy, this is the one.
These cookies are perfect to eat as a snack throughout the day or for a quick breakfast!
Ingredients
- 2 cups uncooked quick oats
- 2 ripe bananas
- 1 cup unsweetened, all natural applesauce (check ingredients!)
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 Tbs raw unfiltered honey
- 1/3 cup chocolate chips or cranberries
Directions
- Preheat oven to 350 degrees.
- Mix all ingredients.
- Line cookie sheet with parchment paper. Drop spoonfuls of cookie dough onto paper and flatten slightly.
- Bake about 25-30 minutes, until cookies start to brown. Let cool for 5 minutes before moving to a cooling rack. Cookies will harden as they cool.
- Store in an airtight container for up to a week.
