It’s no secret that I am about as white as they come. I was raised on Midwestern food – meat and potatoes, and the only Mexican food my mom ever cooked/cooks is definitely “white” (sorry mom, but it’s true).
As I’ve gotten older, I’ve learned how to make enchiladas, rice, beans, tacos, fajitas, empanadas and a couple of other Mexican dishes (nothing too crazy, of course). Branching out and learning something new about cultural foods certainly has its perks – like a delicious dinner minus the restaurant bill.
I’m looking forward to Cinco de Mayo, well, let’s be honest – for the food. It’s a chance for me to try out some new recipes and expand my skills. Oh, and a chance to eat some delicious Mexican food. Do I sound pregnant and hungry? CAUSE I AM.
